The new concept exemplifies our love for the simplicity in cooking with open wood fire, which enhances the depth of flavour that delights our taste buds. The logo symbolically underscores the pivotal role of temperature in mastering woodfire cuisines, reaching temperatures exceeding a thousand degrees Celsius.

The use of the open-fire grill allows the inherent flavours of the ingredients to shine, unhindered by excessive seasonings or complicated preparations. Kevin Khoo, a seasoned professional in the realm of hospitality, brings a wealth of experience to his role as the General Manager of Fireplace.

His formative experiences at various French and Japanese fine dining establishments laid the foundation for Kevin's passion for delivering exceptional dining experiences that extends beyond the plate. With many years of exposure to a diverse range of wines, it sparked his interest and fueled a desire to explore and deepen his knowledge within the realm of oenology.

Apart from wines, Kevin is an avid motorcycle enthusiast, who loves the freedom and adrenaline that comes with being on the open road astride a motorcycle.

Looking ahead, Kevin’s aspirations for Fireplace are ambitious yet rooted in a commitment to excellence. His aim for Fireplace is to transcend borders, aspiring to establish it as a multi-national brand with a presence in every city in Southeast Asia.

Commonwealth Concept’s Head of Culinary & Product Innovations - Chef Isaac Tan 

Awarded “Best Head Chef in Asia” at the Haute Grandeur Global Restaurant Awards 2019, 2021 & 2022, Chef Isaac Tan, Commonwealth Concept’s Head of Culinary & Product Innovations, has been with Bedrock since it launched in 2008 and was key in introducing Bedrock’s signature Tomahawk Steak to Singapore in 2009. For over a decade now, his unparalleled expertise in meats, coupled with his culinary knowledge, has defined the Bedrock dining experience. Honouring Bedrock’s philosophy of classic dishes crafted from the finest ingredients, Chef Isaac spearheaded the menu design and development for Fireplace.

His culinary philosophy is simple. “Fresh produce, whether it is meat, seafood or vegetables, are at the heart of every dish I create,” says Chef Isaac. “I believe in treating ingredients with respect, and in doing so we honour the people from whom we source our produce.”
